Shallots

Shallots for wholesale and food service, with bulb type, curing, size, condition and packing specified.

Shallots are an allium buying requirement that should be distinguished from an unspecified onion order. Buyers may seek a particular bulb type, colour, size or culinary presentation, while peeled, frozen or dehydrated forms require further processing specifications. Duara Group assesses the actual shallot requirement, pack, quantity and destination. Combined national onion-and-shallot statistics are not presented as shallot-only output. The country directory uses evidence that specifically identifies shallot production, with commercial availability and supplier approval assessed separately for each inquiry.

Shallots buying guide

Bulb type and commercial identity

Specify the shallot type, variety or accepted alternative and the required skin and flesh characteristics. Whole dry bulbs should not be confused with green shallots, spring onions or another product sold under a regional name. If peeled, cut, frozen or dehydrated material is required, identify that process explicitly. A buyer should approve an alternative based on its culinary and handling requirements, not accept any small onion as a substitute solely because its diameter is similar.

Curing, condition and size assessment

Define the size basis and the expected condition of the skin, neck and bulb. Inspection should address decay, sprouting, physical damage, contamination and unsuitable moisture or curing condition. Representative samples need to show the range in a commercial pack. If a grade or variety declaration is important, require it in writing with an agreed tolerance schedule. An attractive outer skin does not establish the internal condition or the consistency of the entire offered lot.

Kitchen and manufacturing uses

Food-service buyers should describe whether shallots will be peeled in the kitchen or ordered in a prepared form, since usable yield and labour requirements affect the comparison. Retail buyers may need uniform packs, labels and a specific bulb presentation. A processor should identify the preparation, cut and ingredient requirements for its recipe. A raw-bulb supplier is not automatically a verified producer of peeled, frozen or dried shallots, and those capabilities should be checked separately.

Packing and ventilation planning

Choose sacks, mesh packs, cartons or crates around the actual bulb condition, protection and route. Confirm net weight, unit packs, ventilation and pallet configuration. A package should support the agreed storage plan rather than trap unsuitable moisture or allow unnecessary handling damage. Prepared shallots require a separate hygienic process, packaging and temperature-control specification. State lot identification and labels so the product remains traceable after repacking or splitting a wholesale consignment.

Storage, rotation and incoming checks

Request harvest, curing, preparation or packing information relevant to the form ordered. Agree the storage and handling instructions with the proposed supplier and plan the buyer's distribution period. No universal shelf life is promised for every shallot type or processed form. Receiving checks should record bulb condition, size distribution, pack integrity and any required analytical documentation. Define how differences in declared weight, sprouting or deterioration will be documented and addressed under the commercial agreement.

Information for a shallot quotation

Send the exact product type, variety if required, form, size, colour, curing and quality limits, pack, quantity and destination. Attach any customer standard and identify whether a sample or pre-shipment inspection is needed. Duara assesses source and delivery feasibility against that schedule. Country evidence is deliberately specific: an onion-and-shallot aggregate cannot establish shallot tonnage or an available lot. Current origin, grade, stock, certificates and shipment arrangements need confirmation from the proposed supply chain.

Documented Production by Country

These are documented examples of shallots cultivation or processing. Named operators are evidence of activity, not Duara partners. Undated statements are labelled as such; no national quantities, certifications or availability are inferred. Global country coverage remains partial.

These are dated production or manufacturing records, not a list of Duara suppliers or confirmed delivery destinations. The directory covers the evidence verified so far; it does not claim an exhaustive list of all producing countries.

Shallots in France

Ferme de Fontenay documents shallot and banana-shallot cultivation along the Seine valley. This grower evidence is separate from combined onion-and-shallot statistics; no shallot-only national tonnage is inferred.

Frequently asked questions

Can onion-and-shallot totals be labelled as shallot production?

No. Combined statistics do not provide a shallot-only breakdown. This page uses specifically identified production evidence and does not invent a national shallot quantity.

Can small onions replace shallots?

Only if the buyer explicitly approves that different product. Specify the required shallot type, variety and culinary use rather than ordering by diameter alone.

Does whole-bulb supply include peeled shallots?

Not automatically. Peeling and further processing need separate confirmation, hygiene and handling requirements, pack information and an agreed ingredient specification.

What belongs in the receiving specification?

Include bulb identity, size, curing and physical condition, defects, pack and net weight. Agree sampling and how sprouting, deterioration or weight differences will be assessed.
